Calong: Where Korean Flavours Meet European Techniques

Nestled on the vibrant Stoke Newington Church Street, Calong offers a unique dining experience that seamlessly blends Korean heritage with European culinary techniques. Founded by Chef Joo Young Won, formerly head chef at Michelin-starred Galvin at Windows, this intimate 30-seat restaurant has quickly established itself as one of North London's most exciting culinary destinations.

A Chef's Journey

After 15 years at Galvin at Windows (seven as head chef), Chef Joo was inspired to reconnect with his Korean roots following a research trip to his homeland. The result is Calong—named after a Busan dialect word meaning 'trendy' or 'well-dressed'—where his classical French training meets authentic Korean flavours.

Signature Dishes

The menu changes regularly based on seasonal availability, but several standout dishes have already gained acclaim:

  • Kimchi fritters: Crisp medallions of fermented cabbage served with a zingy chilli mayo
  • Joo's fried chicken: Perfectly crispy with a sweet chilli and peanut sauce
  • Mushroom sotbap: Clay pot rice with mixed mushrooms and brown butter
  • Seafood jjamppong: A spicy Korean-inspired bouillabaisse with langoustine, mussels and squid

Each dish demonstrates Chef Joo's masterful balance of Korean and European influences, using the finest British seasonal ingredients.

Atmosphere and Experience

The restaurant's cosy interior creates an intimate dining atmosphere with textured white walls, natural materials, and thoughtful lighting. The wine list focuses on small, independent producers who grow grapes organically, with many options available by the glass.

Local Connection

Calong fits perfectly into Stoke Newington's independent restaurant scene, offering something genuinely unique to the area. While not strictly traditional Korean cuisine, it provides a fascinating and delicious interpretation that has already earned praise from critics and diners alike.

Whether you're a Korean food enthusiast or simply looking for an exceptional dining experience in North London, Calong delivers innovative cuisine that honours both Korean heritage and seasonal British produce.
