A Chef's Journey

After 15 years at Galvin at Windows (seven as head chef), Chef Joo was inspired to reconnect with his Korean roots following a research trip to his homeland. The result is Calong—named after a Busan dialect word meaning 'trendy' or 'well-dressed'—where his classical French training meets authentic Korean flavours.

The menu changes regularly based on seasonal availability, but several standout dishes have already gained acclaim:

  • Kimchi fritters: Crisp medallions of fermented cabbage served with a zingy chilli mayo
